Ingredients

  • 2 cups raw peanuts unsalted, in shells or shelled
  • 1 tbsp neutral vegetable oil helps spices stick and promotes even roasting
  • 1/2 tsp salt adjust to taste
  • 1 tsp smoked paprika for depth of flavor
  • 1/2 tsp chili powder adds heat and smoky aroma
  • 1/4 tsp cumin for warm, earthy notes
  • 1 tsp honey or maple syrup for a caramelized glaze

Equipment

  • Baking sheet
  • Mixing bowl
  • Small bowl
  • Spatula or spoon

Method

  1. Preheat your oven to 180°C (350°F) and spread the raw peanuts evenly on a rimmed baking sheet.
  2. Roast the peanuts for about 10 minutes, shaking the pan halfway through, until they turn golden and fragrant.
  3. Meanwhile, in a small bowl, combine smoked paprika, chili powder, cumin, and salt to create your spice blend.
  4. Once roasted, transfer the warm peanuts to a mixing bowl and drizzle with the vegetable oil, tossing to coat evenly.
  5. Sprinkle the spice mixture over the oiled peanuts and toss thoroughly so every nut is coated with the flavorful spices.
  6. Drizzle the honey or maple syrup over the coated peanuts and toss again to distribute the sweetness evenly.
  7. Spread the spiced, glazed peanuts back onto the baking sheet in a single layer and roast for an additional 5 minutes, listening for a gentle crackle and observing a fragrant aroma.
  8. Remove from the oven and let the peanuts cool on the sheet for about 10 minutes; as they cool, they'll become crisp and fragrant.
  9. Transfer the cooled peanuts to a jar or bowl. Rest for at least 30 minutes to allow flavors to meld and enjoy this crunchy, smoky, sweet snack!

Notes

Feel free to customize the spice blend with cinnamon or cayenne for different flavor layers. Store in an airtight container for up to a week for maximum crunch.
