  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh basil
  • 1 large lemon for zesting
  • 1 tablespoon lemon zest
  • 2 cloves garlic minced, optional
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Preheat your oven to 200°C (392°F).
  2. Pat the chicken breasts dry with paper towels to help the crust stick better.
  3. Zest the lemon directly over a small mixing bowl, then add the chopped herbs, minced garlic (if using), salt, and pepper.
  4. Mix the herb and lemon zest mixture thoroughly to combine the flavors.
  5. Rub the herb mixture all over each chicken breast generously, pressing it into the meat.
  6. Heat a tablespoon of olive oil in an oven-safe skillet over medium-high heat until shimmering and fragrant.
  7. Carefully place the chicken breasts in the hot skillet, searing for 2-3 minutes per side until they develop a golden-brown crust and smell fragrant.
  8. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until a meat thermometer inserted into the thickest part reads 75°C (165°F).
  9. Remove the skillet from the oven and let the chicken rest for 5 minutes, tented loosely with foil if desired, to retain juices.
  10. Slice the chicken breasts and serve warm, enjoying the bright herb and lemon flavors with a crispy crust.
