  • 1/4 cup chopped fresh parsley or cilantro/dill for variation
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh basil
  • 1 lemon zest of lemon use a microplane for fine zest
  • 2 tablespoons olive oil or substitute with avocado oil
  • 1 teaspoon salt sea salt preferred
  • 1/2 teaspoon black pepper freshly cracked
  • 2 cloves garlic minced, optional

Method
 

  1. Preheat your oven to 200°C (392°F).
  2. Pat the chicken breasts dry with paper towels until they feel slightly tacky but not wet.
  3. In a small mixing bowl, combine the chopped parsley, thyme, basil, lemon zest, salt, pepper, and minced garlic if using. Mix well until fragrant.

  5. Heat the olive oil in an oven-safe skillet over medium-high heat until it shimmers and begins to smoke slightly.
